The best simple and healthy pancake recipes

Pancake day is just around the corner and, if like me, you are still carrying around those Xtra Xmas pounds then this could spell DISASTER for your psychological-if-not-so-existent-in-real-life attempts at dieting. Well, fear not amigos, because below are a list of nutritious and delicious pancake recipes to satisfy your sweet tooth without playing havoc with your waistline. Woohoo!


Protein pancakes
You will need:
– ¼ cup raw oats
– ¼ cup cottage cheese
– ½ scoop protein powder
– ½ cup egg whites

1)      Blend all the ingredients together in a blender (or if you’re #healthyandwealthy, a nutribullet).

2)      Pour over a hot griddle and cook until golden brown, flipping so that each side doesn’t burn.

3)      Serve with almond butter, peanut butter, actual nuts – go mad.

Banana pancakes

You will need:
– 1 whole egg (yolks n all)
– 2 egg whites
– 1 small ripe banana

1)      Mash the banana like your life depends on it, whisk all the eggs and mix the ingredients together alike you’re the remix to ignition.

2)      Fry with FryLite spray, until golden brown.

3)      Serve with Agave syrup.

Blueberry pancakes

You will need:
– 1 whole egg
– 2 egg whites
– ¼ cup raw oats (blended)
– ½ scoop vanilla protein powder
– Handful of fresh blueberries.

1)      Whisk the eggs and mix them with the flour.

2)      Add the protein powder and stir until all lumps are removed.

3)      Fry at a low heat with Frylite.

4)      Serve with more fresh blueberries.

Coconut and dark chocolate pancakes

You will need:
– ¼ cup raw oats
– ½ scoop chocolate protein powder
– 2 egg whites
– 1 whole egg
– Cup of 1% fat milk.
– ½ cup of coconut shavings.

1)      Blend the oats into a fine powder.

2)      Whisk eggs and mix with oat powder and protein powder.

3)      Add milk slowly and mix together until all lumps are removed.

4)      Mix in the coconut shavings.

5)      Fry on a low heat using Frylite spray.


If these recipes weren’t enticing enough, here’s some healthy toppings to go alongside them:

–          Use Stevia powder instead of sugar if you’re after that sweet, sweet sugar/lemon juice vibe.

–          Same concept applies if you want a cinnamon sugar topping- just replace the sugar with sweetener and bobs your teapot.

–          Sliced bananas.

–          Honey.

–          Fresh strawberries/blueberries.

–          Dark chocolate- chips, squares, melted… you get the idea.

REMEMBER: These are #healthy pancakes so you can eat twice as many and feel half as bad- result!
